CHEF ANGELO SATO TAKES HUMBLE CHICKEN TO THE NEXT LEVEL IN 2023

Known for his yakitori-style restaurant with a ‘comb-to-tail’ ethos, and considered “one of London’s most ambitious chefs” according to Tim Hayward at Financial Times, Angelo Sato will introduce a brand-new menu at his 18-cover Frith Street restaurant, Humble Chicken, from 19th January 2023.


Curating a Japanese-led 8-course tasting menu with a European accent, the move will see Angelo sink his teeth into his biggest project yet. Sato has taken inspiration from his East Asian roots, along with time spent working in some of the world’s greatest European kitchens. Priced at £95 per person, the sample menu will include:



Snacks

Mussel, citrus kosho ponzu & nanbanzuke winter vegetables

King crab, shoyu koji daikon, avocado & nori

Grilled oyster, fermented kaki, citrus kosho beurre blanc & burnt chicken fat


Shokupan & Butter

Miso beurre noisette, chicken liver, fermented Rhubarb


Sashimi

Shime saba, shiso kosho, turnip, ginger & shiso dashi


Chawanmushi

Crab, scallop tortellini, crab foam, tarragon & yuzu


Bao

Crispy head & trotter, den dashi, karashi & quail egg


The Humble Chicken

chicken achilles, charcoal fat, daikon oroshi, citrus kosho; donabe kashiwa gohan; seasonal vegetables; chicken dumpling, miso & yuzu dashi


Millefeuille

Wasanbon ice cream, almond brittle, shaved miso cured foie


Coffee

Purin, burnt coffee, coffee mouse, cappuccino


Angelo comments; “It’s always been my dream to open a restaurant where I could express myself through food. I originally opened Humble Chicken as a Yakitori restaurant during the pandemic, which felt like the right way to go at the time. After a successful eighteen months, I am determined to put my heart, soul, and everything-in-between to evolve, and so am creating a new and more refined dining experience at Humble Chicken.’


Humble Chicken 2.0 will open to guests from Wednesday 19th January. The menu will be available every Wednesday to Saturday from 5.30pm – 9.30pm for dinner only. 18 covers and a maximum of two sittings a night.
