ANGELO SATO TO LAUNCH HUMBLE CHICKEN

Chef Angelo Sato will open an intimate yakitori bar, Humble Chicken, in January 2021, bringing the spirit of a traditional izakaya to the heart of London’s Soho.

Humble Chicken is inspired by the traditions of izakayas in Tokyo, where friends and colleagues meet for informal post-work drinks and snacks, a place to unwind at the end of the day, offering an escape from the outside world.


At the core of Humble Chicken’s ethos is ‘comb to tail’ cooking; a culinary exploration of the bird in its entirety. Yakitori will be cooked over Bincho-tan charcoal on a traditional Japanese grill imported from Kappabashi in Tokyo and served on wooden skewers. Sauces such as Tare and Burnt Fat will further enhance the bold flavours of the yakitori. Shredded Cabbage + Orange Ponzu will be served in between skewers to refresh the palate.


Sato moved from Tokyo to London at just 17, working for both Clare Smyth and Adam Byatt before moving to New York where he worked at various restaurants including Eleven Madison Park. He has since set up his own grab and go businesses which include Omoide and Yatai here in London, before finding the site for Humble Chicken on Frith Street.
