Chef Jeremy Lee needs little introduction. He is best known (and adored by hundreds) for keeping Quo Vadis at the top of its game. Jeremy previously cheffed with the greats – at Blueprint Café, at Bibendum with Simon Hopkinson and with Alistair Little.

What was one of the very first dishes you remember eating?

Mum’s lentil soup - the recipe from my granny. ‘tis a national dish, which we loved and ate at home often, brought to the table in a tureen and ladled out to Dad, with my two brothers, my younger sister and of course Granny. It is delicious and so loved. Cooked with a smoked ham hock, simmered until the meat fell off the bone and as tired into the soup.

What is your guiltiest food pleasure?

Bao fried Chicken, though not much guilt. A Mr Kipling Cherry Bakewell, however, in the thick of few doubles at the shop is not unknown


Which restaurant to you long to return to?

River Cafe


What would be your last meal?

Langoustines mayonnaise, grouse & co, raspberries and vanilla ice cream


What dish do you cook the most at home?

Porchetta tonnata. At a table crowded with friends, bread & wine

St John with one of Fergus’s drawings


Favourite vegetable?

Salsify


Most-used condiment?

Mustard - both English (Colmans powder) & Dijon

Could not possibly comment
