ROOTS THE NEW COOKBOOK BY TOMMY BANKS
Roots the first cookbook from Tommy Banks, the renowned Michelin-starred chef, has been released (5th April). The premise of Roots is all about celebrating the seasonal and key ingredients of the land surrounding Tommy’s award-winning restaurant, The Black Swan in Oldstead, North Yorkshire.
The ingredients that Tommy grows, forages and preserves are showcased throughout his creative recipes such as his courgette stalk ‘pasta’ which is elevated by his wild garlic pesto and his Yorkshire curd tart with Yorkshire rhubarb and hay cream, which evokes memories of childhood summertime. Tommy also shares preserving techniques and ideas on using these ‘root’ ingredients all year round; with the likes of his ‘Umeboshi’ pickled strawberries.
