WILSONS LAUNCHES A NEW MENU THAT CELEBRATES SUSTAINABILITY

In 2016, chef Jan Ostle and partner Mary Wilson opened Wilsons, a neighbourhood restaurant where Britain’s finest produce is celebrated and respected, where sustainability is at its heart and is matched with expert cooking. To celebrate the restaurant’s core values and style of cooking, the duo have decided to create a daily-changing menu based on the best produce their surrounding area has to offer, as well as a simple plat du jour lunch for just £10.
Jan and Mary’s aim is to ensure that sustainability is the focus at every phase of the development of each dish. The new style of menu will continue to use locally and sustainably sourced ingredients, with the intention of showcasing the restaurant’s own recently expanded farm and local suppliers.
Establishing a set menu format for the evening will allow guests to be treated to a more
comprehensive dining experience and develop an in-depth understanding of the sustainable ethos of Wilsons. Each dish will focus on local ingredients, conscientiously re-imagined in the thoughtful yet creative style of Jan’s kitchen.
Example dishes include:
Partridge and Langoustine Chou Farci
Steamed Pollock with Cauliflower and Roast Pheasant Juices
Quince and Cider Brandy Soufflé
A menu will be served each evening in 4 or 7 courses priced at £40 and £50 respectively.
