WILSONS, A SMALL, INDEPENDENTLY RUN ENGLISH BISTRO

Wilsons, a neighbourhood restaurant on Bristol’s Chandos Street, opened in 2016. Operated independently by partners Jan Ostle and Mary Wilson, this elevated English bistro encapsulates the ‘joy of keeping things simple’.

Whilst Wilsons aims to feel uncomplicated, complete love and care is put into everything they do. From growing their own produce, to working on a concise but thoughtful wine list, to the quality of every dish they send out of the kitchen, Wilsons is immersed in consideration. They gather, hunt and grow much of what is served on the weekly-changing blackboard menu and much else is sourced carefully from suppliers around the British Isles.

Chef Jan Ostle (previously of Royal Hospital Road and The Square) and co-owner Mary Wilson met when they worked in a restaurant together in Notting Hill. Their relationship is the foundation of Wilsons, Mary’s background is in biodynamic farming which she applies to the restaurant by growing an array of diverse herbs, fruit and vegetables, which in turn dictates Jan’s dishes.

The menu is written daily with a selection of snacks, starters, main courses and puddings. Example dishes include Pheasant and Langoustine Raviolo, Autumn Truffle Linguine, Creamed Leeks, Cornish Gouda and Tarte Tatin with Bay Leaf Ice Cream.
