MAREIDA RESIDENCY AT CAROUSEL

Introducing Mareida, the highly anticipated London debut from Prenay Agarwal and the acclaimed Chilean culinary duo, chef Carolina Bazán and her sommelier partner Rosario Onetto. Carolina, named Latin America's Best Female Chef in 2019 by The World’s 50 Best, has pioneered a thrilling 'New Chilean' style at Santiago hotspot Ambrosía, capturing the "quirky, understated elegance" of the vibrant Chilean gastronomic landscape, as described by Nicholas Gill of The New York Times.

For the first time, the team is bringing their talents to London, hosting a residency at the celebrated Carousel in Fitzrovia from Tuesday 17th September until Sunday 22nd September. This residency will give guests a preview of the cuisine, wine, music, and culture of the Andean South ahead of Mareida’s official opening as a restaurant and wine bar in early 2025.

Carolina's playful menu at Mareida will feature influences from Patagonia to the Atacama, incorporating a kaleidoscope of ideas from Santiago's thriving pan-American migrant populations. Expect dishes like Scallop parmesana, Grilled sea bass with quinoa, avocado, pebre, and chili, and Lamb corn cakes. The menu also includes fine dining entremeses such as Fish tartare with granita in an ice cream cone, a bread course of Fried pumpkin pastry, Potato pancake with seasoned butter, and theatrical petit fours of White chocolate, passion fruit, black sesame, and quinoa moai, a nod to Easter Island statues.

Rosario Onetto will oversee the wine selection, curating a list that reflects the diverse geography of Chile. The wine pairing at Carousel will begin with Sauvignon Blanc Viña Leyda Lot 4 2022 from Leyda. Main courses will be complemented by Semillon Co-Pa Itata 2021 and Garnacha Masintin 2021 from Maule. For the finale, guests can enjoy a smooth, oaked pisco as a digestif.
