Toklas restaurant, from the founders of Frieze, will play host to Vicente Todolí of the Todolí Citrus Fundacio, for a one-off ticketed evening on Thursday 9th February, 7pm. This will be the first tasting of its kind, providing guests with the chance to learn more about these rare varieties of citrus, before a sit down dinner by Head Chef Yohei Furuhashi and further citruses to taste.

The menu will include fruits that have been used at Toklas before, in carefully balanced dishes and drinks:

Marsh pink grapefruit gimlet


Artichoke, Borneo lemon and sage fritto misto


Scallop crudo with puntarelle and Neapolitan lime


Grilled duck and Bartoil Tarocco orange with endive


Panna cotta and caramelised citrus


Clementine tea

There will also be the option for a low-intervention wine pairing to go alongside the feast.

The Todolí Citrus Fundacio has been in the Todolï family for six generations, studying and spreading citrus and citriculture. The 11-acre plot, which sits in the coastal Mediterranean region of Bartolï, is home to over 400 varieties of citrus, with a specialised library and laboratory dedicated to gastronomy and citrus oil research. Founder Vicente Todolí lives nearby, overseeing the growing day-to-day and educating groups who wish to learn more.

Toklas are the sole UK importers of Todolí Citrus, utilising more familiar fruits and lesser-known varieties across their bar, bakery and restaurant. In the bakery, Head Baker Janine Edwards uses punchy bergamot within a Chocolate and Bergamot chiffon cake, and sweet clementine for a crisp Rice pudding tart. The much-loved Bostock will take a new seasonal shape with an Orange marmalade and almond frangipane topping. In the restaurant, citrus forms an integral yet subtle part of the menu, thanks to dishes such as

Sea bass crudo with lemonquat, or Squid with chickpea, Iberiko tomato and sudachi.
